Broccoli Rabe
INGREDIENTS:
So I found some Broccoli Rabe at the Circus food market in Brooklyn, never in my life have I tried Broccoli Rabe so I grabbed a bushel to test it out. Broccoli rabe doesn’t taste anything like broccoli despite its name, in fact it is rather bitter in taste. Since I was new to this green I thought it would be best to cook it lightly with some olive and add a little bit of garlic for flavor. This way I could know the true flavor for the next time when dealing with this rabe. All you need is a bunch of Broccoli rabe 1-1.5 lbs is good, 2-4 cloves of garlic, and 2 tablespoon of olive oil.
INSTRUCTIONS:
First wash, the shake the leaves dry, there is no need to get all the water out. Cut the ends of the stems then chop into 2-3 in pieces, add your oil to a work or a large pan, while the oil is heating up add your garlic but make sure it does not burn. When garlic burns it will leave a bitter taste, when the garlic looks slightly toasted add your rabe and stir. Once the oil has incorporated into the Broccoli rabe, put a lid on and lower heat to med. Wait 2 minutes and stir again. This is when you can decide if the greens are done, some like it a bit on the raw side and others more fully cooked. enjoy!
