Recipe:
Garbanzo soup
INGREDIENTS:
1 can of chickpeas 1/2 an onion, diced 3 diced cloves of garlic 2 tablespoons of olive oil 2 large veggie bullion cubes 5 tablespoons of spaghetti sauce (a garlic kind works well) 1 chopped carrot 1 small can of corn 2 teaspoons of cumin 1.5 teaspoons of lemon juice 1 teaspoon of thyme 1 teaspoon of honey 1 teaspoon of black pepper (these measurements are all approximate. I didn't measure anything when I made it, but really season everything to your taste)
INSTRUCTIONS:
1. in saucepan, saute onion in olive oil and garlic for 5 minutes. Add cumin. Saute for another 3 min. 2. In separate pot, bring add everything else to 3 cups of water and bring to a boil. Then, reduce heat and simmer for 10 min. Add sauteed onions and garlic. 3. Voila. Soup! Add whatever vegetables you want - I like broccoli, mushrooms, and string beans. You can also add rice. The recipe above would serve 2.
COST:
This recipe is CHEAP and filling. Although it helps if you already have some of the seasonings. At my grocery store, I buy 2 cans of chickpeas for a dollar. Pasta sauce is cheap too, and you can get a jar at Trader Joe's for 99 cents. The veggies will cost more, but you can get the above meal (which serves 2) probably costs $5 if you already have some of the seasonings.
