Homemade Okonomiyaki Recipe (Osaka style)
INGREDIENTS:
Basic Ingredients: - 3 oz pork, thinly sliced (or bacon) - 7 oz cabbage - 4 scallions - 2 tbsp red pickled ginger, or regular - Chinese ginger, finely chopped Batter: - 5 1/4 oz all-purpose flour - 5 oz water - 2 oz grated yam - 4 eggs - 1/2 tsp salt - Vegetable oil: Toppings: - Okonomiyaki sauce (or mayonnaise mixed with Worcestershire sauce) - Dried bonito powder (optional) - Ao-nori flakes (green seaweed) - Mayonnaise (preferable Japanese) Extra: Mozzarella cheese (Trust me it tastes very good!) and any left over from your fridge!
INSTRUCTIONS:
1. Cut the pork into 3 inch pieces. 2. Mince the cabbage and scallions. 3. Whisk the flour, water, yam, eggs and salt in a medium sized bowl. The batter should resemble pancake flour - this is one of the reasons why many people refer to this recipe as "as you like it pancakes". 4. Add the cabbage and scallions into the batter and mix well. The mixture will now be lumpy since there are larger pieces inside the batter. 5. Heat a medium sized pan on the stove on medium heat. 6. Pour a small amount of oil on the pan (or a griddle can be used). Just as you would cook a pancake, pour the batter in small circles in the pan. 7. On top of the pancake lay a few slices of the pork or bacon on the batter. Try not to use too much pork or bacon though as it will not cook properly. 8. Grill both sides until the meat has been cooked thoroughly through. 9. When the okonomiyaki pancakes have been completely lay them on a serving plate. It is easier to place the toppings on the table to allow each person to use the topping of preference. 10. Topping suggestion: Brush each okonomiyaki with the okonomiyaki sauce. Sprinkle it with a little bonito powder and ao-nori flakes. Squeeze a little Japanese mayonnaise on top for a little added taste.
COST:
