The Cheap and Easy Spareribs
INGREDIENTS:
Couple of days ago I went to whole paycheck to check out the meat department, nobody would be surprised to find porterhouse steaks for $15-17 lbs, but I was surprised to find meaty spareribs for $4.99 on sale – Whole Foods has sales, contrary to what most think. Before I had the chance to go against my splurge I made and impulse buy and picked 3 of the fattiest looking of the group, also got some shallots ($2 lbs), and a lime (each $.50) and headed home.
INSTRUCTIONS:
Rinse the spareribs in cold water, dry with paper towel, and place the large bowl/ dish (deep enough to cover the ribs). Then slice up the 4-5 shallots and place over the ribs, juice the lime, pour onto the ribs, sprinkle 1 tablespoon of sugar and lastly generously salt and pepper. The shallot and lime helps break down the fibers of the meat, making the ribs tender. Once you have all the ingredients in the plate, macerate the shallots and spices into the meat and set in the refrigerator for couple of hours. After two hours macerate using your hands once more and turn the meat (best if you let it sit for a full 12-24 hours). Once you're ready to cook, preheat the oven for 375 F - 400 F and cook for good 45 min – 1hour, this really depends on your oven. This dish is great with some white rice and simple salad, you don’t want a heavy side dish to go with, the ribs will be plenty fatty.
